Bramlage Chocolate, a micro chocolate-maker established in 2006,creates all of its artisanal chocolate from scratch. Beginning withroasting cacao beans in small batches, the perfect combination of cacaovarieties are blended together to produce intricate depths of flavor. Atthe end of the process, the chocolate must be tempered to solidifyproperly. I captured the essence of the company by echoing the motionof the chocolate maker’s tools as he tempers chocolate using thetraditional method of spreading it with a flourish over a marble slab.
